Vegan Granola Bars

Instead of eating store-bought granola bars when you’re on the run, create your own homemade version with this simple recipe. Not only are these granola bars vegan but they are also gluten free! These are very easy to make with your kids and safe in case they sneak a bite of the “dough!”

Vegan Granola Bars
 
Ingredients
  • 1½ cups gluten free rolled oats
  • ¼ teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon chia or flax seeds (or both)
  • 1 cup unsweetened coconut
  • ¼ cup sliced almonds or walnuts
  • ¼ cup sunflower seeds or pumpkin seeds
  • ¼ cup unsweetened dried cranberries
  • ¼ cup unsweetened dried blueberries
  • 1 cup unsalted raw almond butter
  • ¼ cup raw agave nectar
  • ¼ cup unsweetened applesauce
  • ½ teaspoon either vanilla extract or real vanilla bean paste
Instructions
  1. Preheat oven to 350° F.
  2. Mix all ingredients together in large bowl. Make sure to incorporate well!
  3. Use non-stick spray or parchment paper to line one baking sheet.
  4. Press mixture onto baking sheet using spatula or clean hands. Make sure mixture is pressed down well and is smoothed out on top.
  5. Bake for 15-17 minutes or until top of granola is golden brown.
  6. Remove pan from oven and let rest for at least 10 minutes before cutting into squares.
  7. Enjoy!
