Does your family ignore the bananas that start to get speckled with brown spots? Waste no more! The brown, mushy bananas don’t look very pretty, but they are as sweet as sweet can be and perfect for banana bread.
If you are a banana bread lover, and can stash half of the loaf away before it is eaten all up, surprise your family with banana bread french toast tomorrow morning!

- Stir the batter.
- Dip the banana bread in the french toast batter.
Vegan Banana Bread
Yields: 6-8
Ingredients:
- 2 ripe bananas, mashed
- ¾ cup unsweetened soy milk or almond milk
- ¼ cup agave nectar or (honey)
- 1 ½ cups whole wheat pastry flour
- 2 tablespoons ground flaxseed
- 1 tablespoon baking powder
- 1 ½ teaspoons cinnamon
- ½ teaspoon salt
Instructions:
- Preheat oven to 350°F. Grease an 8-inch loaf pan. In a large bowl, whisk together 2 bananas, ¾ cups soy milk, and ¼ cup agave nectar or honey.
- Mix in 1 ½ cups whole wheat pastry flour, 2 tablespoons ground flaxseed, 1 tablespoon baking powder, 1 ½ teaspoons cinnamon, and ½ teaspoon salt. Stir until combined.
- Pour into loaf pan, and bake about 50 minutes or until golden brown and a cake tester comes out clean. Remove from oven and cool completely.
Vegan French Toast
Ingredients:
- 1 ripe banana, mashed
- 1 ¼ cups unsweetened soy milk or almond milk
- ½ tablespoon ground flaxseed
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla extract
- 1 tablespoon almond meal
- coconut oil for pan
Instructions:
- Preheat oven to 350°F. Slice banana bread into pieces that are 1 x 3 inches.
- Place on a baking sheeting and put into the oven to dry out. Bake for 10 minutes and flip until all sides are “toasted” and dry.
- In a medium size bowl, add 1 mashed banana, 1 ¼ cups soy milk, ½ tablespoon ground flaxseed, ¼ teaspoon cinnamon, and ½ teaspoon vanilla extract. Mix together.
- Dip dry pieces of banana bread into wet mixture and coat. Allow the bread to soak up the wet batter. Dip into almond meal, coating all sides.
- In a fry pan, heat coconut oil. Cook banana french toast until crispy on all sides.
- Serve with sliced bananas, syrup, and powdered sugar.
