Christmas is fast approaching and children are out of school. Are you looking for an easy and festive holiday smoothie that you can quickly make for an afternoon snack? This recipe is a healthy twist on an ice cream milkshake, but without all of the added sugar. Instead, we added a date, which is loaded with vitamins and minerals such as folate and iron. It adds just enough sweetness to this smoothie, while adding tons of nutrition, which makes any parent feel great. If your child prefers chocolate instead of vanilla, swap out the vanilla with chocolate almond milk! Santa Claus might even want this with his cookies!
Remove seed and soak date in hot water until tender, about 5 minutes.
In a blender, add softened date, 1 cup chilled vanilla almond milk, ¼ cup chilled coconut milk, ⅛ teaspoon peppermint extract, and 1 cup ice. Add more ice as needed.
Blend until smooth.
If you have any peppermint candy on hand, crush a small piece to sprinkle on top to garnish!
