Popcorn Cauliflower

Popcorn is the classic snack to munch on when watching movies or your favorite sports team. This year, we wanted to mix things up and offer a simple recipe that will be the new favorite snack food at your next party or movie night! We swapped out popcorn with, dare I say, cauliflower! We roasted it, seasoned it, and tested it with our Kidstirs. It was was popping hit!

The secret to this recipe is not so much the cauliflower, but the sprinkle of nutritional yeast. It gives the cauliflower, a cheesy, creamy, and buttery flavor. What’s nutritional yeast? You guessed it, it’s a yeast that is used as a seasoning. It’s not the same as active yeast used in baking or brewer’s yeast, so don’t interchange them for this recipe or you’ll have a bitter mess on your hands!

As a parent, you can feel good every time you sprinkle nutritional yeast onto the cauliflower. Just as the name says, it’s packed with nutrition, adding a boost of protein, fiber, B vitamins and minerals, like iron. If you don’t have nutritional yeast on hand, substitute with Parmesan cheese for this recipe. You won’t get the added nutrition, but you’ll still get a nice cheesy flavor. You can find nutritional yeast at your local health food store in the spice aisle or with the bulk foods.

Kids Can Help:

  • Tear the cauliflower into popcorn pieces.
  • Toss the cauliflower in olive oil.
  • Spread onto a baking sheet.
  • Sprinkle with nutritional yeast.

Popcorn Cauliflower
Serves: 4 cups
 
Ingredients
  • 1 (3 pound) head of cauliflower
  • 1½ tablespoons olive oil
  • salt to taste
  • nutritional yeast to taste
Instructions
  1. Preheat oven to 425°F.
  2. Cut or pull cauliflower apart into popcorn size pieces.
  3. In a medium size bowl, toss pieces of cauliflower in 1½ tablespoons olive oil and season with salt. Evenly spread cauliflower pieces out onto a baking sheet.
  4. Place in the oven for 10-20 minutes, checking and tossing cauliflower around every 5-10 minutes. Remove from oven when cauliflower is tender and can be pierced with a knife.
  5. Season with nutritional yeast and serve at room temperature if kids plan on eating the “popcorn” with their hands.
