Kid-friendly Deconstructed Strawberry Shortcake

The 4th of July is always a great time to get creative and have lots of fun with your kids! Now that it’s summer, my favorite new dessert idea is adding ice cream to anything already delicious: cookies, cupcakes, brownies, chocolate…you name it, it’s even better with a little frozen scoop on top!

So for this 4th of July, I decided to make a deconstructed red, white and blue strawberry shortcake for kids and adults to enjoy. It’s super easy to set up and the kids will have so much fun creating their own personalized 4th of July shortcake.

Ingredients:

  • 1 pint old fashioned vanilla ice cream
  • 1 box shortbread cookies
  • 1 carton strawberries
  • 1 carton blueberries
  • Reddi-whip cream
  • Red sprinkles
  • Blue sprinkles

Cooking Tools:

  • Bowls
  • Spoons
  • Ziploc bags

Directions:

1. Wash and pat dry strawberries and blueberries. Slice strawberries and set aside.

2. Take a handful of the shortbread cookies and place in a plastic ziplock bag. Slightly pound the cookies on the countertop to break them up into more cookie crumb pieces (some can be big, some small, you and your kid’s preference).

3. Place blueberries, strawberries, cookie crumbs, red sprinkles and blue sprinkles in individual bowls with serving spoons.

4. Set up everything in a serving line across a big table. I would use this order: ice cream, cookie crumbs, sprinkles, berries and whipped cream (which you may have to help them with).

5. Give each child (and adult) their own bowl, and let them go down the serving line to create their own deconstructed red, white and blue strawberry shortcake.
