Granola Chocolate Chip Cookies

There’s nothing like a good, healthy twist on a classic chocolate chip cookie, and thanks to Mandy Fayne, writer of the blog Healthfull Ever After, we have a delicious Granola Chocolate Chip Cookie recipe to share with you.

Jolly Oak GranolaThis recipe uses Jolly Oak Granola, which is an all-natural granola that comes in four different flavors. Jolly Oak has no GMOs, no preservatives and every flavor uses ingredients that are recognizable. And take our word for it — it is absolutely delicious!

One of the best things about this recipe is that it’s completely customizable. When testing this recipe we used Jolly Oak’s Dark Chocolate Coconut Raisin Granola, so we omitted the chocolate chips this recipe calls for, and there was still plenty of chocolate flavor. You can also include walnuts or pecans.

And if you’re feeling really adventurous, you can even turn these cookies into the perfect summer treat — an ice cream sandwich. We tried it with some natural vanilla bean ice cream, and it paired wonderfully with the cookies!

Granola Chocolate Chip Cookies on Sheet

Ingredients:

  • 1 stick unsalted butter, softened
  • ½ cup applesauce
  • ½ cup sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/2 cup quick oats
  • 1 cup Jolly Oak Granola
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 cup chocolate chips
  • ½ cup chopped walnuts or pecans (optional)

Directions:

  1. Preheat oven to 375° F.
  2. In a large bowl mix 1 stick unsalted butter, softened, 1/2 cup applesauce, 1/2 cup sugar, 1/2 cup light brown sugar and 1 teaspoon vanilla.
  3. Add 2 eggs, 1/2 cup quick oats, 1 cup Jolly Oak Granola, 1 cup whole wheat flour, 1 teaspoon baking soda and 1/2 teaspoon salt.
  4. Mix until blended.
  5. Add 1 cup chocolate chips and 1/2 cup chopped nuts, if desired. Stir.
  6. Bake for 12-15 minutes or until golden brown.
