Ingredients:
For Pancakes:
3/4 Cup Foodstirs™ Organic Sweet Potato Pancake Mix
1 Egg
2 Tbsp Melted Butter, Melted and Cooled
1/2 Cups Milk
For Toppings:
1 Organic Banana, sliced
1/4 Cup Walnuts, chopped
1/4 Cup Organic Agave Syrup
Directions
For Pancakes:
1. Heat skillet or griddle over medium heat or to 300 degrees. Lightly coat with butter or non-stick cooking spray. In a large bowl, whisk Egg, Butter, and Milk until combined. Next, add the Sweet Potato Pancake Mix and stir until Pancake Batter forms.
2. Cook pancakes 1- ½ to 2 minutes or until the surface of pancake forms bubbles which begin to pop and bottoms are golden brown.
3. Carefully turn pancakes over with a spatula and cook on the second side until pancakes are cooked thoroughly.
4. Stack your Sweet Potato Pancakes high and top with Banana slices, Walnuts, and Agave Syrup. Enjoy!
