Cook until brown and crispy on both sides. Remove from griddle and set aside. In a large bowl, whisk egg, then slowly add melted butter and whisk until slightly thickened. Add in milk and yogurt and whisk until mixture is smooth. Add Organic Sunday Stacks Pancake Mix and whisk until batter is smooth. Ladle batter onto griddle. Use your fingers to crumble bacon into the batter, about one slice of bacon per pancake. Cook until bubbles begin to form in the middle of the pancake.
