Baked Jelly Doughnut Cookies

Hanukkah is a time that brings families together, sharing traditions, songs, and games! Most of the delicious food shared during this holiday is fried, commemorating the miracle of the Temple oil that burned for eight days. But if you are looking to cut slightly back on calories this year, while still enjoying the delicious fried foods, here is an alternative recipe that has a blend of whole wheat pastry flour, coconut oil, and is baked, not fried.

  • Whisk the egg.
  • Brush the cookies with coconut oil.
  • Use a pastry tip to squeeze jelly into the cookie.
  • Dust cookies with powdered sugar.

Baked Jelly Doughnut Cookies
Serves: 40
 
Ingredients
  • ¼ cup warm water
  • 1 teaspoon sugar
  • 1 teaspoon dry active yeast
  • 1¼ cup whole wheat pastry flour
  • 1¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ cup sugar
  • 3 tablespoons coconut oil, melted
  • 1 egg, whisked
  • ¾ cup milk or plant-based milk
  • 2 tablespoons coconut oil, melted for brushing
  • 1 cup low sugar organic jelly
  • powdered sugar for dusting (optional)
Instructions
  1. In a a small bowl, combine ¼ cup warm water, 1 teaspoon sugar, and 1 teaspoon yeast. Set aside until foamy.
  2. In a large bowl, mix together, 1¼ cups whole wheat pastry flour, 1¼ cups all-purpose flour, ½ teaspoon salt, ¼ cup sugar, 3 tablespoons coconut oil, 1 egg, and ¾ cup milk.
  3. Pour in yeast mixture. Stir until combined. The dough will be very sticky.
  4. Cover and allow to rise until doubled in size, about 30 minutes.
  5. Line baking sheets with parchment paper.
  6. Rub coconut oil onto a scooper. Scoop about 1 tablespoon of dough onto the lined baking sheets. Set aside and allow for a second rising, for about 20 minutes. Preheat oven to 375°F.
  7. Using a pastry brush, brush oil onto each cookie. Place in the oven and bake for about 10 minutes. Remove from oven and allow to cool.
  8. Fill a pastry bag with 1 cup jelly. Using the tip of the pastry bag, push into the bottom or top of the cookie. Squeeze jelly into the cookie.
  9. Dust with powdered sugar.
